I was looking through them and I would like to share with you a great recipe for guacamole that I always make. 4 ripe avocados, peeled & seeded 1 ripe tomato(more if you like), seeded and diced 1/2 cup red onion, finely chopped 1 serrano chili (or jalapeno chili), seeded & minced 1/4 cup cilantro, chopped juice of one lime salt & pepper to taste In a big bowl, mash the avocado with a fork (it's ok if it is a little chunky-this is better than having a smooth creamy guacamole), add the remaining ingredients and mix together gently. Taste and adjust the seasonings. Guacamole tastes best eaten with corn chips that have been warmed in the oven. Please try my recipe and tell me how you like it! Enjoy! Lea |
